Sauce cutlet

We use a homemade kaeshi soy sauce-based sauce with a rich dashi flavor. Enjoy this refined flavor, slightly different from miso cutlet or sauce cutlet, with hot rice and crunchy cabbage.

 

What is Kaeshi Soy Sauce?
This is a traditional Japanese seasoning sauce that has been used in soba noodle soup since the Edo period. It is made by combining soy sauce with mirin and sugar, and leaving it to sit for several days to several weeks to mellow out the harshness and increase the umami and mellowness. When combined with dashi, it adds richness and depth to the entire dish.

Freshly fried pork loin is dipped in a homemade sauce based on soy sauce that is flavored with dashi stock, and served on top of hot rice.
