Limited to 10 servings per day - Takane Soba
Takane soba is our own unique version of Takato soba, a traditional dish from the Takato region of Nagano Prefecture.
Originally, Takato soba was made by adding roasted miso paste and green onions to squeezed radish juice, then pouring the soup over it to make a broth, and then dipping the soba noodles in the broth. It is said that this way of eating it originated in the days before soy sauce was available, when the method of roasting and dissolving the miso was invented to make soba noodles more delicious.
Our Takane soba is made with buckwheat seeds, walnuts, shiso leaves, and green onions in grilled miso, and can be enjoyed with a unique broth made from squeezed radish juice, soba soup, and dashi stock in which the grilled miso is dissolved.
★How to eat: Grind the roasted miso in a mortar to your desired fineness, add grated daikon radish and soba soup, mix, and dip the soba noodles in the broth to enjoy the rich aroma.
